Our protein-packed parfait is rich and nutty, with crunchy bits within and on top. For a layered look that gives you different tastes in each bite, we set aside some vanilla-flavored yogurt for a topping and stir powdered peanut butter and chopped peanuts into the rest. If you prefer, you can mix everything together and skip the layering.

Ingredients

Plain fat free Greek yogurt

½ cup(s)

Monk fruit sweetener with erythritol

1½ tsp

Vanilla extract

¼ tsp

Powdered peanut butter

2 Tbsp

Unsalted dry roasted peanuts

1½ tsp, finely chopped

Unsweetened coconut flakes

1 Tbsp, large variety, toasted

Instructions

In a small bowl, stir together the yogurt, monk fruit sweetener, and vanilla. Set aside 2 tbsp of the vanilla yogurt mixture. Stir the powdered peanut butter and chopped peanuts into the remaining yogurt mixture. Spoon the peanut butter yogurt mixture into a small glass; top with the vanilla yogurt mixture and coconut.
