Peanut butter-banana pancakes

All-purpose flour
2 Tbsp
Baking powder
⅛ tsp
Table salt
⅛ tsp
Ground cinnamon

Banana
1 small, ripe, mashed well
PB2 Performance Peanut protein with Dutch cocoa plant powder
2 scoop(s)
Plain unsweetened almond milk (vitamin and mineral fortified)
2 Tbsp, or plain lowfat milk
Egg
1 large egg(s)
Cooking spray
5 spray(s)
Blueberries

Instructions

Stir together flour, baking powder, salt, and cinnamon in a small bowl. Whisk together banana, PB2 Performance Peanut Protein with Dutch Cocoa Plant Powder, milk, and egg in another bowl. Add dry ingredients to wet ingredients; stir until just combined.

Coat a nonstick skillet or griddle with cooking spray; heat over medium-low heat. Spoon 3 tbsp batter onto skillet or griddle to make each pancake (you can use a scant 1/4-cup measure to do this). Cook pancakes for 2 to 3 minutes on one side until you see lots of bubbles; flip and cook until cooked through, 1 to 2 minutes more. Repeat with remaining ingredients.
