The classic combination of peanut butter and banana makes these pancakes a yummy way to start the day! Cook the pancakes until they reach that perfect golden brown color, top with some fresh, seasonal fruit, and this sweet, savory breakfast is ready to go.

Ingredients

All-purpose flour

2 Tbsp

Baking powder

tsp

Table salt

tsp

Ground cinnamon

tsp

Banana(s)

1 small, ripe, mashed well

PB2 Performance Peanut protein with Dutch cocoa plant powder

2 scoop(s)

Plain unsweetened almond milk

2 Tbsp, or plain lowfat milk

Egg(s)

1 large egg(s)

Cooking spray

5 spray(s)

Fresh blueberries

¼ cup(s), optional

Instructions

  1. Stir together flour, baking powder, salt, and cinnamon in a small bowl. Whisk together banana, PB2 Performance Peanut Protein with Dutch Cocoa Plant Powder, milk, and egg in another bowl. Add dry ingredients to wet ingredients; stir until just combined.
  2. Coat a nonstick skillet or griddle with cooking spray; heat over medium-low heat. Spoon 3 tbsp batter onto skillet or griddle to make each pancake (you can use a scant 1/4-cup measure to do this). Cook pancakes for 2 to 3 minutes on one side until you see lots of bubbles; flip and cook until cooked through, 1 to 2 minutes more. Repeat with remaining ingredients.
