You won't believe you're eating healthy with these tasty, hearty potatoes. We made them creamy with low-fat buttermilk and then added flavor with Parmesan cheese and lots of chopped chives. Just cook the potatoes in simmering water for 30 minutes, mash them to your heart's content right in the pot, and stir in the rest of the ingredients while the potatoes are still warm—it truly doesn't get much easier than that. For a twist, you can add the bold flavor of wild mushrooms to these mashed potatoes by soaking 1/4 cup dried shiitake, porcini, or black trumpet mushrooms in boiling hot water for 10 minutes while the potatoes are simmering away. Drain well, chop, and stir in with the cheese.

Instructions

Place potatoes in a large pot and cover with an inch of water; bring to a boil, reduce heat, simmer and cook until fork-tender, about 30 minutes. Drain and return potatoes to pot.

Mash potatoes with a potato masher. Stir in remaining ingredients and mix well to combine. Yields about 2/3 cup per serving.
