Orzo and spinach salad

This beautiful orzo and spinach salad is a fabulous picnic or barbecue side dish. The hot orzo helps wilt the spinach to the perfect consistency. Then all you need to do is add grape or cherry tomatoes and white wine vinegar, toss it all together, and you're set to go. You can switch to baby arugula and diced sweet red peppers for another tasty option, and use your favorite white cheese if you don't like feta.


Ingredients
Spinach
2 cup(s), baby leaves, packed
Uncooked orzo
⅓ cup(s)
Grape tomatoes
1 cup(s), or cherry tomatoes, halved
White wine vinegar
2 tsp
Table salt
¼ tsp
Black pepper
¼ tsp
Crumbled feta cheese
¼ cup(s)
Instructions

Place spinach in a serving bowl.

Bring a medium-size pot of water to a boil; stir in orzo. Cook until tender, about 10 minutes; drain well. Spoon hot orzo over spinach and toss to coat; let spinach wilt.

Add tomatoes, vinegar, salt and pepper to orzo; toss gently but well. Sprinkle with cheese; serve immediately. Yields about 1 cup per serving.
