Oatmeal gives these moist muffins a satisfying, chewy texture. Enjoy them for breakfast or as a mid-afternoon energy boost. Using store-bought, pre-made mix cuts down on the prep time as well as the ingredient list. All you have to do is mix everything in a bowl and then spoon the batter into muffin cups. That's why it takes less than a half an hour to get these deliciously citrusy muffins onto the table.

Buttermilk baking mix

Uncooked old fashioned rolled oats

¾ cup(s)

2% reduced fat milk

Sugar

¼ cup(s)

Egg

1 large egg(s), beaten

Unsweetened orange juice

2 Tbsp

Orange zest

Instructions

  1. Preheat oven to 400ºF. Line a muffin tin with 10 paper muffin liners.
  2. Combine all ingredients, except 1 1/4 teaspoons of sugar, in a large bowl; stir until moistened.
  3. Spoon 1/4 cup of batter into each prepared muffin cup. Sprinkle each with 1/8 teaspoon of sugar and bake until golden, about 15 minutes.
