One of the best things about an open-faced sandwich is that it makes you feel like you’re getting a lot more food than a single-stacked one. Bagel thins help keep the Points low, while the accompanying fruit salad fills out the plate.

Dijon mustard

Everything bagel thins
1 bagel(s), toasted
Tomato

Instructions

Coat a medium nonstick skillet with cooking spray and heat over medium. Crack the eggs into the pan and cook to desired degree of doneness, 3 to 5 minutes. Sprinkle the eggs with the salt and pepper.

Spread ¾ tsp mustard over each bagel half; evenly layer the tomato, avocado, eggs, and pickled onions over the bagel halves. Serve with the fruit salad.
