This warm, open-faced sandwich is one of Coach Lisa’s favorite ways to use up leftover shredded chicken. Search for the "Thousand Island dressing" in the WW app or feel free to use your favorite bottled reduced-fat Russian or Thousand island dressing. For a sandwich with a crispy bottom, heat this recipe in an air fryer at 400℉ for about 4 minutes.

Ingredients

Light rye bread

1 slice(s)

Thousand Island dressing, reduced fat

1 Tbsp, or reduced-fat Russian dressing

Hamburger pickle chips

3 chip(s)

Cooked shredded chicken breast

3 oz

Sauerkraut

2 Tbsp, refrigerated, drained

Light Swiss cheese

1 oz

Instructions

  1. Preheat broiler to high.
  2. Place bread on a small baking sheet; spread dressing over bread and place pickles on top. Layer on chicken, sauerkraut, and cheese. Transfer to broiler, and cook until cheese is golden and bubbly, 3 to 4 minutes. Serve immediately.
