No-cook strawberry, almond, and oat bites

These fruity two-bite sweet snacks have a double dose of almond. Freeze-dried strawberries provide concentrated berry essence; be sure to seek them out over soft-chewy dried strawberries.


Ingredients
Salted dry roasted almonds
⅓ cup(s)
Freeze-dried strawberries
⅔ cup(s)
Unsweetened powdered almond butter
¾ cup(s)
Monk fruit sweetener with erythritol
¼ cup(s)
Table salt
¼ tsp
Uncooked old fashioned rolled oats

Instructions

In a mini food processor, pulse the almonds until chopped. Add the strawberries and pulse until the nuts and fruit are finely chopped.

In a medium bowl, stir together the powdered almond butter, monk fruit sweetener, salt, and ½ cup water until smooth. Stir in the strawberry mixture, adding 1 to 2 tbsp more water if the mixture is too thick to combine. Fold in the oats. Divide the mixture into 12 equal portions, rolling each into a ball. Store in the refrigerator for up to 1 week.
