This nachos recipe features American’s favorite snack food with a Mexican spin. It really doesn't get any easier than using microwaved-popped popcorn, store-bought taco seasoning, and pre-shredded Mexican-style cheese. Everything comes together in less than 15 minutes. We suggest having little bowls of chopped up tomatoes, olives, and jalapenos to use as toppings, but this popcorn tastes great straight out of the oven, too.


Ingredients
Reduced-fat microwave popcorn (94% fat-free)
12 cup(s) popped
Light butter
0.25 cup(s)
Reduced sodium taco seasoning
2 tsp
Shredded reduced fat Mexican-style cheese blend
0.75 cup(s)
Instructions

Preheat oven to 300°F. Line a rimmed baking sheet with aluminum foil.

Place popped popcorn in a large bowl; remove any unpopped kernels. In a small microwave-safe bowl, microwave butter until melted; stir in taco seasoning mix. Pour mixture over popcorn; toss until evenly coated.

Spread popcorn on prepared baking sheet; sprinkle with cheese. Bake until cheese melts, about 6 to 8 minutes.
