A traditional Japanese recipe, this glaze is famously delicious on cod, but try brushing it on salmon, Arctic char, sea bass, or even eggplant. The results will be fantastic.

Ingredients

White miso

3 Tbsp

Dark brown sugar

1½ Tbsp

Mirin

1 Tbsp

Sake

1 Tbsp

Instructions

  1. In small bowl, whisk all ingre- dients. Reserve 2 tbsp glaze for serving. Brush remaining glaze on 11⁄4 lb of cod or other fish before grilling. Drizzle reserved 2 tbsp glaze on fish just before serving. Store glaze in covered plastic or glass container and refrigerate for up to 1 week.
