Mini chocolate peanut butter ice cream sandwiches
These sweet little treats could not be easier to make. We’ve taken some shortcuts to keep this recipe as easy as possible, combining a chocolate fudge ice cream bar with creamy peanut butter and chopped peanuts, and then sandwiching the mixture between chocolate wafers. We opted for salted peanuts in our recipe to give these a sweet and salty flavor, but you can use unsalted or honey roasted peanuts, if you like. To enhance the crunch factor, use crunchy peanut butter. The ice cream sandwiches will need to set in the freezer for about 30 minutes to firm back up before you dive in.

Unsalted creamy peanut butter
1 Tbsp, chopped
- Allow Weight Watchers Giant Chocolate Fudge Bar to soften slightly and combine with peanut butter and salted peanuts.
- Return to freezer to set for about 30 minutes.
- Divide evenly across 4 wafer cookies and sandwich with remaining 4 cookies.
- Keep in the freezer until ready to serve.
