Microwave breakfast egg cup with feta and chives

Breakfast doesn’t get much quicker to prepare than these easy egg cups which are ready in eight minutes. The egg mixture is whipped up in a single-serving portion and spooned into a custard cup or ramekin, microwaved until done, and then topped with crumbled feta cheese and fresh chives for a final punch of flavor. It’s quick, easy, and flavorful. Amp up the flavor of the eggs by sprinkling in some garlic powder, onion powder, paprika, or a little crushed red pepper. Pair the egg cups with toast and fresh fruit for the ultimate quick morning meal to start your day.
1 tsp, minced fresh
Crumbled feta cheese
1 Tbsp, or goat cheese
- Spray 10-ounce microwavable custard cup or ramekin with nonstick spray.
- Whisk together egg, egg white, water, ½ teaspoon chives, salt, and pepper in small bowl. Pour egg mixture into prepared cup.
- Microwave on High 30 seconds, then stir. Microwave until eggs are almost set, 25–30 seconds longer. Top with cheese and remaining ½ teaspoon chives. Serve at once.
