This recipe relies upon convenient canned and jarred foods to make a colorful, no-fuss, main-course salad with plenty of Mediterranean flavors. Another plus: It’s ready in 20 minutes. Unlike many traditional tuna salads, this version omits the mayonnaise for a lighter, tangier flavor. The mix of fresh vegetables—artichoke hearts, roasted red peppers, cucumbers, and cherry tomatoes—provide a tasty mix of flavors and textures as well as a good dose of visual appeal.
Ingredients
Canned tomato puree
4 Tbsp
Fresh lemon juice
2 Tbsp
White wine vinegar
1 Tbsp
Table salt
⅛ tsp
Black pepper
⅛ tsp
Canned kidney beans
15½ oz, drained and rinsed
Canned tuna packed in water
14 oz
Canned artichoke hearts, drained
6½ oz, rinsed and halved
Roasted red peppers (packed in water)
4 oz, water-packed, sliced
Cucumber
¼ cup(s), chopped
Cherry tomatoes
12 medium, halved
Fresh parsley
2 Tbsp, fresh, chopped
Instructions

Mix together tomato puree, lemon juice, and vinegar in a large salad bowl; season to taste with salt and pepper.

Add remaining ingredients to bowl and toss to mix. Cover and chill until ready to serve.
