When the temperature starts to warm up, it’s always a good idea to have an easy, refreshing dessert in your back pocket. This smooth, creamy pudding is a good one to have in your recipe arsenal since it will help counter the heat as well as any spicy entrées that come before it—and it takes less than 15 minutes of hands-on time. It does need to chill for at least 2 hours or overnight, so it’s a wonderful make-ahead option if you’re preparing it for a gathering. It gets a double dose of mango flavor thanks to the fresh mango and also the mango nectar that is reduced and thickened with cornstarch to make the pudding.

Ingredients

Mango nectar

1.25 cup(s)

2% reduced fat milk

0.75 cup(s)

Cornstarch

4 Tbsp

Mango

1 large

Peppermint leaves

Instructions

Pour nectar into a medium saucepan; place over medium heat.

Meanwhile, place milk and cornstarch in a medium-size mixing bowl; stir to combine and slowly pour into mango nectar, stirring continuously. Increase heat to medium-high and continue stirring until thick, about 4 to 5 minutes. Remove from heat and stir half of mango into mixture; pour pudding into four 1/2-cup custard cups. Refrigerate pudding for at least 2 hours or up to overnight.

Combine remaining mango with mint and spoon over chilled pudding. Yields about 1/2 cup pudding and 1 tablespoon of fresh mango per serving.
