Manchego is a sweet, nutty, sheep’s milk cheese from Spain. It has a dense texture and rich flavor , so a little goes a long way. You can also substitute other firm, flavorful cheeses like Gruyere.

Red cabbage
1 cup(s), shredded, lightly packed
Shredded carrots

1 item(s), without skin and seed, pitted, peeled, and cut into 1/2-inch dice

Instructions

Whisk together lime juice, oil, sugar, salt, and pepper sauce in large bowl. Add green cabbage, red cabbage, carrot, onion, and cilantro; toss until coated evenly. Let stand 10 minutes.

Lay tortillas on work surface. Divide cabbage mixture evenly among tortillas. Top each with one-fourth of avocado, one-fourth of tomato, and 2 tablespoons manchego. Roll up tortillas to enclose filling; cut each wrap in half.
