Cobbs salads are a classic for a reason, offering a delicious mix of colors, textures, and flavor. The same is true for this lighter version, but you don’t miss anything thanks to the flavorful, creamy blue cheese; diced avocado; crunchy, shredded romaine lettuce; hard-cooked eggs; and savory crumbled turkey bacon—all your favorites plus some healthy add-ins make this a main-dish salad that is as delightful to eat as much as the original. You can substitute diced rotisserie chicken or leftover chicken for the turkey, if that’s what you have on hand. One rotisserie chicken yields about 3 cups of meat—more than enough for this recipe.

Romaine lettuce

Cooked turkey breast with skin

16 oz, diced (2 cups)

Tomato

2 large, diced

Avocado

Egg whites

2 large, hard-cooked, chopped

Cooked turkey bacon

6 slice(s), coarsely crumbled

Blue cheese

¼ cup(s), crumbled, not packed, crumbled

Instructions

  1. To make the dressing, whisk together the vinegar, oil, salt, and pepper in a small bowl.
  2. Spread the lettuce on a platter. Arrange the turkey, tomatoes, and avocado in rows on top of the lettuce. Sprinkle with the egg whites, bacon, and blue cheese. Serve the dressing on the side. Yields: about 1 1⁄2 cups per serving.
