Lentil Burgers with Yogurt-Feta Sauce

The base of these veggie burgers is made of the flavorful lentils and vegetables from the WW Hearty Lentil & Tomato Soup (search for it in the WW app). Be sure they’re well drained before mashing so they stay together better when formed into patties. If a patty starts to break when you turn it over, just push it back together with a spatula. After you place the patty on the bun and top it with the yogurt-feta sauce, you’ll never notice the cracks.


Ingredients
Hearty Lentil & Tomato Soup
2 cup(s), well drained (search for this recipe in the WW app)
Whole wheat panko breadcrumbs
½ cup(s)
Uncooked onion
¼ cup(s), chopped, or shallot, finely chopped
Ground cumin
1 tsp
Kosher salt
½ tsp, divided
Black pepper
½ tsp, divided
Egg
1 large egg(s), lightly beaten
Canola oil
1 Tbsp
Plain fat free Greek yogurt
⅓ cup(s)
Crumbled feta cheese
¼ cup(s)
Dill
1 tsp, chopped
100% whole wheat hamburger bun

Lettuce
4 leaf/leaves, large
Instructions

Using a fork, in a large bowl, mash the drained lentils and vegetables until coarsely mashed. Stir in the panko, onion, cumin, ⅜ tsp each salt and black pepper, and egg. Let rest for 15 minutes.

In a large nonstick skillet, heat the oil over medium. Divide the lentil mixture into 4 equal portions and shape each into a 4-inch patty. Add the patties to the pan. Cook the patties, carefully flipping once, until firm and browned, 5 minutes per side.

Meanwhile, in a small bowl, stir the yogurt, cheese, dill, and remaining ⅛ tsp each salt and black pepper. Spread about 1½ tbsp of the sauce on each bun top. Layer 1 lettuce leaf and 1 patty on each bun bottom. Top the burgers with the bun tops.
