The patties for these easy vegetarian burgers combine lentils with a mix of fresh vegetables for a hearty entrée that’s ready in just 30 minutes. The bouillon cube adds wonderful savoriness to the lentils and vegetables that you’ll be able to taste in every bite. Lentils have a lot going for them: They’re inexpensive, quick and easy to prepare (no soaking required), and offer a nice dose of plant-based protein. We’ve included breadcrumbs in the patties to help prevent them from becoming dry. Serve these burgers with your favorite toppings, such as lettuce, tomato, sliced avocado, or a smear of mustard.
Ingredients
Dried lentils
1 cup(s), red variety
Water
1¼ cup(s)
Vegetable bouillon cube
1 cube(s)
Carrots
½ medium
Celery
½ rib(s), medium, chopped
Onion
1 medium, chopped
Dried oregano
1 tsp
Dried thyme
½ tsp
Dried plain breadcrumbs
1½ cup(s)
Olive oil
1 tsp
Instructions

Combine lentils, water, bouillon cube, carrots, celery, onion, oregano, and thyme in a saucepan. Cover and simmer 20 minutes.

Stir in 1 cup bread crumbs. Shape mixture into 6 patties and sprinkle with remaining bread crumbs.

Heat oil in a nonstick pan, add patties and cook until browned on both sides.
