Give your brown-bag lunches a flavor boost with our lemony, veggie-filled tuna salad.


Ingredients
Canned tuna packed in water
5 oz
Carrots
½ small, grated
Light mayonnaise
2 Tbsp
Onion powder
¼ tsp
Garlic powder
¼ tsp
Lemon zest
1 tsp, or more to taste
Fresh lemon juice
1 Tbsp
Kosher salt
⅛ tsp
Black pepper
½ tsp
Whole wheat bread
4 slice(s)
Tomato
4 thin slice(s)
Arugula
½ cup(s), baby variety, lightly packed
Instructions

In small bowl, combine tuna, carrot, mayonnaise, onion powder, garlic powder, lemon zest and juice, black pepper. and salt.

On 2 slices of bread, place 1/4 cup arugula and top each evenly with tuna salad. Layer the tomatoes on top. Cover with remaining bread slices.
