You can use these flavor-packed chicken tenders as a standalone entrée with some vegetable sides, chop them and toss onto a grain bowl or a bed of baked spaghetti squash, or tuck them into a sandwich wrap. The zesty lemon flavor comes through clearly, and the toasted garlic gives the chicken a super-savory backbone.

Ingredients
Lemon zest
1 Tbsp
Fresh lemon juice
1½ Tbsp
Kosher salt
¾ tsp
Black pepper
½ tsp
Garlic
3 clove(s), minced
Extra virgin olive oil
1½ Tbsp, divided
Uncooked boneless skinless chicken breast tenderloin
1 pound(s)
Instructions
1
In a medium bowl, whisk together the lemon zest, lemon juice, salt, black pepper, garlic, and 1 tbsp oil. Add the chicken and toss well to coat.
2
Heat the remaining ½ tbsp oil in a large nonstick skillet over medium. Add the chicken mixture, scraping any excess garlic into the pan. Cook, turning the chicken occasionally, until done, about 10 minutes.
