Shelled edamame

12 oz, frozen

Plain fat free Greek yogurt

¼ cup(s)

Lemon zest

1½ tsp

Fresh lemon juice

3 Tbsp

Kosher salt

¾ tsp

Fresh basil

Instructions

  1. In a small saucepan, bring the edamame and ½ cup water to a boil. Cover, reduce the heat to medium, and cook 5 minutes.
  2. Pour the edamame and cooking water into a food processor. Add the yogurt, lemon zest, lemon juice, and salt. Process until smooth, about 1 minute, scraping down the sides of the bowl as needed. Add the basil; process until very finely chopped.
