Korean-inspired chicken and broccoli skewers

½ cup(s), chopped or sliced, finely
Unseasoned rice vinegar

Less sodium soy sauce

Dark brown sugar

Toasted sesame oil

Uncooked skinless boneless chicken thigh

Broccoli
3 cup(s), chopped, large florets (about 10 oz)
Instructions

Combine scallions, vinegar, soy sauce, sugar, oil, and pepper in a glass dish. Add chicken and toss to coat. Let sit 30 minutes.

Remove chicken from marinade; reserve marinade. Slice chicken into 32 bite-size pieces. Thread chicken and broccoli even among 8 metal or wooden skewers (if using wooden skewers, soak in water for 20 to 30 minutes to prevent charring).

Coat a large nonstick grill pan with cooking spray; set over medium-high heat for 2 minutes. Add skewers and cook, turning once and brushing with any remaining marinade in the bowl after 2 minutes, until well marked and cooked through, abøut 8 minutes total.
