Instructions

Preheat a mini waffle maker; coat with cooking spray.

Combine all ingredients in a blender and blend until almost a smooth batter; allow to rest for 5 minutes.

To make waffles, pour about 1/4 cup batter onto prepared waffle maker; close and cook through, about 2 to 3 minutes. Repeat with remaining batter to make 5 waffles.
