Horseradish-bacon dip

Total time: 15 min • Prep: 7 min • Cook: 8 min • Serves: 8 • Difficulty: Easy

A definite crowd-pleaser, this creamy dip is ready in just 15 minutes. It’s also a wonderful make-ahead option as the dip will only get better as the flavors meld together while in the refrigerator. You can use kitchen shears to chop the bacon directly into the skillet, which browns all the little bits and allows it to cook a little more quickly. You’ll need about three green onions to yield the amount needed for this recipe. Serve with baked potato chips, crackers, or raw vegetables or all three. If you’ve got some, leftovers make a wonderful topping when spread onto baked potatoes.

Ingredients

Uncooked turkey bacon

4 slice(s)

Reduced fat sour cream

0.75 cup(s)

Reduced calorie mayonnaise

0.25 cup(s)

Store-bought horseradish

2 Tbsp

Table salt

0.25 tsp

Black pepper

0.25 tsp

Uncooked scallion(s)

5 Tbsp

Instructions

1

Place a large nonstick skillet over medium-low heat. Cook bacon, turning occasionally, until lightly browned and crisp, about 5 to 6 minutes. Drain bacon on paper towels and then tear or chop into small pieces; set aside.

2

In a medium bowl, stir together sour cream, mayonnaise, horseradish, salt and pepper until blended. Stir in all but 1 tablespoon each bacon and scallion (reserve for garnish). Transfer dip to a small serving bowl; cover and refrigerate at least 15 minutes for flavors to blend.

3

Garnish dip with remaining tablespoon each bacon and scallion. Yields about 2 tablespoons dip per serving.
