Hoisin-glazed mini turkey meat loaves

Blending an American classic with Asian flavors in these mini meat loaves is sure to be a hit at the dinner table. Making these into mini form is the best way to get this entrée on the table faster since the smaller size mean they cook more quickly in the oven. This recipe calls for lean ground turkey breast, but you can also use ground chicken breast. Serve these meat loaves with roasted carrots if you like: Toss 10 baby carrots with 1½ teaspoons canola oil and salt and pepper to taste and roast in a 400˚F oven until tender, 20 to 25 minutes.

Uncooked 99% lean ground turkey

Egg
1 large egg(s), lightly beaten
Whole wheat breadcrumbs
¼ cup(s)
Scallions
¼ cup(s), chopped or sliced, finely chopped, plus more for garnish
Less sodium soy sauce
1 Tbsp
Garlic
2 clove(s), minced
Fresh ginger
1 tsp, minced
Hoisin sauce
¼ cup(s), divided

Preheat oven to 350°F.

In medium bowl, combine turkey, egg, breadcrumbs, scallions, soy sauce, garlic, ginger, and 2 tbsp hoisin sauce. Mix gently with your hands. Into 2 (6-oz) mini loaf pans or muffin-pan cups, pat mixture evenly. Over top of each meatloaf, spread remaining 1 tbsp hoisin.

Bake until meatloaves are firm and browned and instant-read thermometer inserted into center of each registers 165°F, 20 to 25 minutes.

Let meatloaves cool 5 minutes in pans. Run table knife around inside of pans to release meatloaves and transfer to plates.
