This omelet is as versatile as it is easy to make. Try it with roasted turkey or baked tofu. And you can vary the cheeses as well; mozzarella or cheddar would be great options. If you have any fresh herbs on hand, chop some up to sprinkle on the cheese. Serving the whole family for breakfast? These ingredients also work as a frittata, and you can have it ready to serve four in less than 20 minutes. Simply use a large heavy ovenproof skillet and follow directions for steps 1 and 2. Once the eggs are just about set, sprinkle the frittata with ham and cheese and place under the broiler until the cheese melts, 2 to 3 minutes. Cut into 4 wedges.
