Pikliz, or Haitian pickled cabbage, is a flavor-packed condiment, made with lots of shredded vegetables, warm spices, and a bit of heat brought to you by the Caribbean's favorite chili, the scotch bonnet. The pikliz is a wonderful fat-free topping to add and help brighten up stewed meats, or served as a relish alongside grilled fish. It makes a terrific topping for just about any kind of taco.

Uncooked green cabbage

Shredded carrots

Instructions

In large bowl, combine all ingredients except vinegar and pack into 32-oz jar with lid. Pour vinegar over vegetables to cover. Push down vegetables to submerge. Cover jar and refrigerate for at least 2 days and up to 2 weeks.
