The grinder salad sandwich went viral for good reason. A crunchy salad is the perfect complement to salty deli meats and melty cheese. If you've never had it, think of it as a meaty Italian sub combined with tangy, pickle-y antipasti and a creamy slaw. To up the non-starchy veggies and lower the points, we WW-ified it by leaning into the salad part (earn 2 Points!), but all of the elements of the original are still present: garlicky bread, lots of satisfying deli meat, some gooey provolone, sharp but sweet onions, and pickled peppers. Play around and customize it to your heart's content. Try shredded rotisserie chicken instead of the deli meats, add whatever other veggies you have laying around (shredded carrots or thinly sliced celery would be great in this), or swap in cider vinegar for the red wine vinegar.

Instructions

To a medium bowl, add the red onion slices. Cover with cold water. Let stand for 10 minutes. Rinse with cold water and drain well. Pat dry with paper towels.

Preheat oven to 425F. On a large sheet pan, arrange the bread slices. Coat with cooking spray. Sprinkle with 1/2 tsp Italian seasoning, 1/2 tsp garlic powder, and the crushed red pepper. Bake for 5 to 10 minutes, or until crunchy and toasted. Top with the provolone slices. Place back in oven for 1 minute, or until cheese melts.

In a large bowl, whisk the mayonnaise, red wine vinegar, salt, pepper, and remaining 1/2 tsp Italian seasoning and 1/2 tsp garlic powder. Add the red onion, pickled peppers, lettuce, deli turkey, pepperoni, and tomatoes. Toss until well combined. Serve with cheese toasts.
