Grilled Salmon with Herbed Caper Sauce

Try this delicious salmon recipe for dinner this week..The salmon is seasoned with just salt and pepper so as not to overpower the flavor of the fish. The fish cooks for about 6 minutes, and you'll want to be certain not to overcook it since that can dry out the fish. The Herbed Caper Sauce can easily be scaled up or down to use on other recipes. It is equally delicious on grilled shrimp or steak. Serve this dish with herbed rice and asparagus.

Shallot

Red wine vinegar

Water

Garlic

Red pepper flakes

Uncooked wild pink salmon fillet
20 oz
Table salt

Black pepper

Instructions

Puree parsley, oregano, capers, shallot, vinegar, water, garlic, and red pepper flakes in food processor. With motor running, add oil. Transfer sauce to bowl.

Sprinkle salmon with salt and pepper. Spray large ridged grill pan with nonstick spray and set over medium-high heat. Add salmon and cook, turning once, just until opaque in center, about 6 minutes.

Remove skin and place salmon on platter or 4 plates. Drizzle evenly with sauce.

Serving size: 1 salmon fillet and 1½ tbsp sauce
