Grilled salmon with ginger-scallion sauce

The combination of ginger, scallions and garlic provides an excellent base for the sauce. Serve this dish alongside your favorite grain and vegetables.

3 Tbsp, finely chopped
Cilantro
3 Tbsp, finely chopped
Scallions
3 Tbsp, finely chopped
Minced ginger
1 Tbsp
Garlic
1 clove(s), minced
Water
3 Tbsp
Fresh lemon juice
1 Tbsp
Extra virgin olive oil
2 tsp
Table salt
½ tsp, divided
Uncooked salmon
20 oz, with skin (4 [5-oz] fillets)
Black pepper

Coat a grill rack with cooking spray. Preheat grill to medium high or prepare medium-high fire.

Meanwhile, to make sauce, stir together parsley, cilantro, scallion, ginger, garlic, water, lemon juice, oil, and 1/4 tsp salt in serving dish. Set aside.

Sprinkle flesh side of salmon with remaining 1/4 tsp salt and pepper. Place on grill rack and grill, turning once, until just opaque in center, about 10 minutes. Serve with sauce. Remove salmon skin before eating.
