Grilled miso-glazed cod

Cod makes an excellent choice for grilling. When the fish begins to flake and turn opaque, it's time to flip it.


Ingredients
Cooking spray
4 spray(s)
White miso
3 Tbsp
Dark brown sugar
1½ Tbsp
Sake
1 Tbsp
Mirin
½ fl oz, (1 Tbsp)
Uncooked Atlantic cod
20 oz, 4 (5-oz) fillets, skin removed
Scallions
2 Tbsp, chopped
Instructions

In small bowl, whisk miso, sugar, sake, and mirin and spread over fish. Cover and refrigerate for at least 2 hours or up to 1 day.

Off heat, coat grill rack or grill pan with nonstick spray. Preheat gas grill or grill pan to medium, or prepare medium fire.

Remove fish from marinade and reserve marinade. Transfer fish to grilling basket. Grill fish for 5 to 7 minutes. Turn fish over and brush with reserved marinade (to create thicker glaze). Continue to grill until fish is opaque and flakes easily with fork, 5 to 7 minutes more. Garnish fish with scallions before serving.
