It takes just 5 ingredients and 18 minutes to put together these quick sandwiches that are full of flavor and make an excellent vegetarian choice. We used 2 tsp. of hot sauce to add a nice zip to this dish, but you can use more or less depending on your taste. We used Cheddar cheese for this recipe, but you could use Monterey Jack instead or use a mix of each. If you don't have a panini press, you can cook the sandwiches in a skillet and press them down with another skillet. Serve this with corn salad or coleslaw.

Ingredients

Fat free refried beans

cup(s), low sodium

Flatbread

1 item(s)

Uncooked onion

2 Tbsp, chopped, white, diced finely

Shredded fat free Cheddar cheese

¼ cup(s)

Hot sauce

2 tsp, or to taste

Instructions

  1. Preheat panini sandwich press.
  2. Spread beans in center of flatbread, then top with onions and cheese.
  3. Fold the rounded ends of flatbread in toward each other (about 2 inches); then fold the straight ends in to meet them, overlapping to form a basic burrito shape.
  4. Grill on Panini press until cheese is melted and grill marks form. Drizzle with hot sauce.
