Apples and cheddar cheese are a classic duo that deserves to be celebrated in as many forms as possible—here, in an easy grilled cheese upgrade. The key to success is to cook over medium-low heat and no higher; that’ll give you evenly toasted bread and perfectly gooey cheese, while the apple stays nice and crisp. You’ll love the way the crunch of the apple slices echoes the crunch of the bread with every bite. We prefer a sweet apple, such as Honeycrisp or Gala, but use whatever you have on hand.

Reduced fat cheddar cheese

Heat a large nonstick skillet over medium-low heat. Spread 1 tsp mustard over each of 2 bread slices; top evenly with the apple slices and cheese. Top with the remaining bread slices. Carefully coat both sides of each sandwich with cooking spray.

Add the sandwiches to the pan. Cook until the bread is well toasted and the cheese is melted, 2 ½ to 3 minutes per side.
