In a large, shallow dish, combine ¾ cup almond milk, 1 tbsp molasses, a scant tsp ginger ¾ tsp cinnamon, and eggs; whisk until well blended. Dip each slice of the bread into the egg mixture, turning several times to coat.

Coat a large griddle or nonstick skillet with cooking spray. Heat the griddle or pan over medium heat. Add the bread slices, cooking in batches if necessary. Cook, turning once, until golden brown, 2 to 3 minutes per side.

Meanwhile, in a small bowl, whisk together the yogurt, 1 tbsp almond milk, and the remaining 2 tbsp molasses, ⅛ tsp ginger, and ¼ tsp cinnamon. Drizzle the yogurt mixture over the French toast.
