Cloud bread has the flavor of sandwich bread but without the gluten and the carbs. The secret to the consistency of this light and airy bread is to whip the egg whites into stiff peaks. This easy-to-make bread melts in your mouth with the combination of three different cheeses, including cream cheese, Parmesan cheese and Mozzarella cheese. Garlic powder, oregano, and parsley mix perfectly with the flavor of the cheese. Serve this bread as an appetizer dipped in pizza or pesto sauce. It makes an excellent side dish for spaghetti or a salad. The bread can be made a day ahead.

Cooking spray

Egg
3 large egg(s)
Low fat cream cheese
3 Tbsp, at room temperature
Baking powder
½ tsp
Unsalted butter
2 Tbsp
Garlic powder
½ Tbsp
Dried oregano
½ Tbsp
Part skim mozzarella cheese
12 oz, cut into 12 even slices
Grated Parmesan cheese
6 Tbsp
Fresh parsley
6 Tbsp, chopped

Place oven rack in middle of oven. Preheat oven to 300°F. Cover a large sheet pan with parchment paper; lightly coat with cooking spray.

Separate egg yolks from whites; place each in separate mixing bowls. Whisk cream cheese into bowl with yolks until smooth. Add baking powder to bowl with whites; beat on high speed with an electric mixer until fluffy and soft peaks form. Slowly and gently fold egg yolk mixture into egg white mixture. Spoon mixture into 12 even mounds onto prepared baking sheet. Bake until lightly browned, 18 to 20 minutes.

Meanwhile, prepare garlic mixture. Melt butter in microwave or in a small saucepan; stir in garlic powder and oregano.

Preheat broiler to high. Brush butter mixture over cloud bread; top each with 1 slice mozzarella. Broil until cheese melts, 1-2 minutes; garnish each with 1/2 Tbsp Parmesan and parsley.
