They're wonderful served with roasted potatoes and salad, but equally enjoyable hard-cooked and sliced over sweet potato toast, or scrambled into fried rice. Roast the potatoes for this meal ahead of time so they'll reheat quickly while you make the eggs.

Roasted potatoes (no oil)

1 cup(s), made with cooking spray and seasonings of your choice

Mixed greens

Tomato

½ small, sliced

Cucumber

½ cup(s), sliced

Plain fat free Greek yogurt

3 Tbsp

Cook eggs in a nonstick skillet until desired degree of doneness. Serve with warmed sweet potato wedges, and a salad of mixed greens, tomato, and cucumber drizzled with yogurt mixed with the herb sauce. Season to taste with salt and pepper.
