In a slow cooker, combine the teriyaki sauce and chicken, turning the chicken over to coat. Cover and cook until the chicken is tender, 3 to 4 hours on High or 7 to 8 hours on Low.

Remove the chicken from the slow cooker and cool slightly. Stir the broccoli into the sauce in the slow cooker; cover and cook on High until crisp-tender, 45 minutes to 1 hour.

Shred the chicken and stir into the broccoli mixture. Serve the chicken mixture over the rice; sprinkle with the scallions.
