2% low fat cottage cheese

Spinach
1 cup(s), chopped
Sun-dried tomatoes (without oil)
⅓ cup(s), chopped
Chives
1 Tbsp
Hot sauce
½ Tbsp
Garlic powder
½ tsp
Smoked paprika
½ tsp
Kosher salt
½ tsp
Black pepper
½ tsp
Soft goat cheese
1 Tbsp, divided

Preheat oven to 350°F. Grease 12 bmuffin pan cups with cooking spray.

In a blender, puree the egg whites and cottage cheese until just smooth (do not over blend), about 10 to 15 seconds. Transfer to a medium bowl.

To bowl, add the spinach, sun dried tomatoes, chives, hot sauce, garlic powder, smoked paprika, salt, and pepper. Stir to combine. Divide among cups of muffin pan. Add 1/4 tsp of goat cheese to each muffin cup.

Bake for 18 to 22 minutes, until set.
