Easy Tortilla Egg Tart

Arrange a tortilla in a pan, crack in a few eggs, sprinkle with Parmesan, and top with Canadian bacon, tomatoes, and scallions. After a few minutes in the oven, you end up with a delicious tart with quiche-like vibes—and very little cleanup since you don’t have to mix anything together. Make sure you use a pan that is slightly too small for the tortilla, so that the edges will bend upward to create a crust that holds in the eggs.

8" low carb flour tortilla

Grated Parmesan cheese

Cooked Canadian bacon

Preheat the oven to 375°F. Coat one side of the tortilla with cooking spray. Arrange the tortilla, coated side down, in a dish that’s slightly too small for it and makes the edges tilt up (a tapered pie plate works well).

Crack the eggs onto the tortilla, evenly spaced apart. Sprinkle the eggs evenly with salt and black pepper, then sprinkle with the cheese. Arrange the Canadian bacon, tomatoes, and scallions on top. Bake until the eggs are set, 12 to 15 minutes. Remove the tart from the pan; cut into 4 wedges.
