Broccoli gets a generous dose of flavor from aromatic garlic, red pepper flakes and a sprinkling of grated Parmesan. Though it is a worthy side on most any plate, it is also a delicious base for cooked chicken, beef, or pork. Just break the head of broccoli into tiny florets and reduce the cooking time a bit.

1 head(s), tops cut into 2-inch florets and stems sliced

Water

Olive oil

4 tsp

Garlic

1 large clove(s), minced

Red pepper flakes

¼ tsp

Table salt

¼ tsp

Grated Parmesan cheese

Instructions

  1. Put the broccoli in a large microwavable bowl and add the water. Cover the bowl with plastic wrap and prick a few holes in the plastic. Microwave on High until the broccoli is crisp-tender, about 3 minutes, stirring once halfway through the cooking; drain. Return the broccoli to the bowl.
  2. Stir together the oil, garlic, red pepper flakes, and salt in a small microwavable bowl. Microwave on High until the garlic sizzles, about 30 seconds. Add the garlic mixture to the broccoli and toss to coat. Sprinkle with the Parmesan. Yields about 1 1⁄4 cups per serving.
