These adorable two-bite treats are great for serving a crowd at any fall gathering. They come together in a flash, thanks to canned pumpkin pie mix—a blend of pumpkin puree, sugar, and spices. They hold up well, with the phyllo shells remaining crispy, for a few hours; but if they’re made much longer ahead than that, the shells will soften.

Preheat the oven to 350°F. Line a sheet pan with foil or parchment paper.

In a medium bowl, whisk together the pumpkin pie mix, evaporated milk, and egg. Arrange the phyllo shells on the prepared pan; spoon the filling evenly into the shells. Bake until the filling is set, 20 to 22 minutes.

Cool to room temperature; top each tartlet with 1 teaspoon whipped topping. Serve at room temperature or chilled.
