This easy salad dressing is luxuriously creamy, bright with lemon zest and juice, and savory with a hint of cheesy flavor from nutritional yeast. Avocado is the star, contributing its rich, slightly sweet flavor and supreme creaminess. In a blender, it emulsifies beautifully with water and oil into a dressing that stays stable (creamy, without browning) for days in the fridge—so you can make it on the weekend for salads throughout the week. You can use fresh avocado or frozen; if using the latter, you might need to blend a little longer to get the dressing completely smooth.

Instructions

In a blender, combine ¾ cup water, avocado, nutritional yeast, lemon zest and juice, oil, and salt. Blend on high speed until completely smooth, stopping to scrape down the sides of the jar as needed, 1 to 2 minutes. If dressing is too thick, blend in additional water 1 tbsp at a time, until just runny.
