If you always have clementines on hand and are looking for ways to enjoy them other than out-of-hand snacking, this salad is for you. A handful of convenience products (broccoli slaw, frozen cooked edamame, precooked sliced chicken breast, bottled dressing) comes together with fresh scallions and easy-to-peel clementines for a fresh, crunchy, filling salad that holds up well for a day or two; feel free to toss it with the dressing, as the broccoli slaw doesn’t get soggy.

Instructions

Grate 1 tsp of zest from 1 clementine. Halve the clementine and squeeze 2 tbsp juice from it. In a small bowl, whisk together the salad dressing, clementine zest, and clementine juice.

Peel the remaining 3 clementines and separate into sections. In a large bowl, toss together the clementine sections, broccoli slaw, edamame, scallions, and chicken. Drizzle the salad with the dressing and toss gently to coat. Sprinkle the salad with the peanuts.
