Instructions

In a medium bowl, stir together the beans, yogurt, chili powder, and salt. Stuff 1 heaping tbsp of bean mixture into each bell pepper half.

Arrange pepper halves on a microwave safe plate, cut sides up. Top with the cheese. Microwave 2 to 3 minutes, until cheese melts.

Top with the salsa and guacamole. Optional additional garnishes: pickled jalapeños, fresh cilantro, fat free Greek yogurt, fresh scallions, chopped tomatoes.
