Cumin and coriander–crusted pork tenderloin

Simple and sumptuous, this roasted pork tenderloin is coated with a flavorful spice rub and quickly browned before it goes into the oven.

Kosher salt
1.25 tsp
Ground cumin
1 tsp
Ground coriander
1 tsp
Dried oregano
1 tsp
Dried thyme
1 tsp
Uncooked lean pork tenderloin
1 pound(s)
Extra virgin olive oil

Instructions

Preheat oven to 450°F.

Stir together salt, cumin, coriander, oregano, and thyme in small cup. Rub all over pork.

Heat oil in large ovenproof skillet over medium-high heat. Add pork and cook, turning occasionally, until brown on all sides, about 6 minutes. Transfer skillet to oven and roast until instant-read thermometer inserted into center of pork registers 145°F, about 8 minutes.

Transfer pork to cutting board and let stand 5 minutes. Cut into 12 slices.
