Simple and sumptuous, this roasted pork tenderloin is coated with a flavorful spice rub and quickly browned before it goes into the oven.

Ingredients

Kosher salt

1¼ tsp

Ground cumin

1 tsp

Ground coriander

1 tsp

Dried oregano

1 tsp

Dried thyme

1 tsp

Uncooked lean pork tenderloin

Extra virgin olive oil

Instructions

  1. Preheat oven to 450°F.
  2. Stir together salt, cumin, coriander, oregano, and thyme in small cup. Rub all over pork.
  3. Heat oil in large ovenproof skillet over medium-high heat. Add pork and cook, turning occasionally, until brown on all sides, about 6 minutes. Transfer skillet to oven and roast until instant-read thermometer inserted into center of pork registers 145°F, about 8 minutes.
  4. Transfer pork to cutting board and let stand 5 minutes. Cut into 12 slices.
  5. Serving size: 3 slices
