Ingredients

Olive oil

1 tsp

Onion

1 medium, chopped

Garlic

2 clove(s), chopped

Canned diced tomatoes with green chilies

14½ oz

Chicken broth

½ cup(s)

Olives

10 olive(s), medium, green (with pimientos), thinly sliced crosswise

Uncooked halibut fillet

24 oz, four 6-ounce fillets

Slivered almonds

4 Tbsp, toasted

Instructions

  1. Heat oil over medium heat in large skillet. Add onion and cook, stirring, until tender, about 4 minutes. Add garlic and cook 1 minute more.
  2. Stir tomatoes, broth, and olives into skillet and bring to simmer. Nestle halibut fillets into skillet. Cover and cook until fillets flake with fork, 8−10 minutes.
  3. Transfer fillets to 4 plates. Spoon tomato and olive mixture over fish and sprinkle each with 1 tablespoon almonds.
  4. Serving size: 1 fillet, about ½ cup sauce, and 1 tablespoon almonds

Notes

If you like, serve the fish with steamed broccoli seasoned with a little salt and pepper and a splash of fresh lemon juice.
