Canned pinto beans are soft and delicate straight out of the can; you’ll likely see lots of broken or slightly crushed beans. No worries, just toss them gently with the seasonings to keep them as intact as possible. The benefit of that soft texture is that the beans get crisp and light when roasted, with a texture similar to potato chips.

Canned pinto beans
15½ oz, rinsed and drained
Ground cumin
½ tsp
Garlic powder
½ tsp
Table salt
¼ tsp
Instructions

Preheat the oven to 400°F. Line a sheet pan with parchment paper or a silicone mat.

Gently pat the beans dry with paper towels or a kitchen towel and place them on the prepared baking sheet. Coat the beans with cooking spray and sprinkle with the cumin, garlic powder, and salt; stir gently to coat. Roast until the beans are dry and crisp to the touch, 32 to 35 minutes, stirring gently after 25 minutes. Cool completely on the pan; store in an airtight container for up to 3 days.
