If you’re a fan of barbecue potato chips, try our healthier edamame riff. It features smoky, slightly sweet BBQ flavor to enhance the goodness of protein-rich soybeans. Be sure to cool the edamame completely before storing; stash in an airtight bag or container for up to 3 days.

Cooking spray

Shelled edamame
16 oz, thawed if frozen
Unpacked brown sugar
1½ tsp
Smoked paprika
1 tsp
Chili powder
1 tsp
Kosher salt
¾ tsp
Garlic powder
½ tsp
Instructions

Preheat the oven to 375°F. Line a baking sheet with parchment paper or use a silicone mat.

Pat the edamame dry with paper towels or a kitchen towel and place in a medium bowl. Coat the edamame with cooking spray and toss well. Sprinkle with the brown sugar, smoked paprika, chili powder, salt, and garlic powder; toss well to coat. Arrange the edamame in a single layer on the prepared baking sheet; lightly coat with cooking spray.

Roast for 30 minutes. Stir the edamame well and rotate the pan. Roast until browned and almost crisp, 10 to 12 more minutes. Cool completely on the pan (it will crisp more as it cools).
