Pico de gallo translates as “beak of rooster,” and it’s a ubiquitous Mexican salsa. Sometimes it’s called salsa fresca, and since the ingredients are the colors of the Mexican flag, some call it salsa bandera. Whatever the name, this basic tomato, onion, jalapeño salsa makes everything from chips to chicken taste great.

Ingredients

Plum tomato

2 pound(s), chopped

Uncooked onion

1 cup(s), chopped, white variety, finely chopped

Jalapeño pepper

2 small, seeded and minced

Cilantro

3 Tbsp, chopped

Fresh lime juice

1½ tsp

Kosher salt

¾ tsp

Instructions

  1. Stir together all ingredients in large bowl. Serve at once or cover and refrigerate up to 1 day.
  2. Serving size: (1/2 cup)

Notes

Experiment with the chile you use in this recipe: Leave the seeds in the jalapeño to make it hotter, use a habanero to make it even more hot, or try a serrano for a spicy citrusy flavor.
